You’ve heard a ton about nutrition and diets over the past few months, so lets wrap up our nutrition series with some delicious Paleo and Zone recipes. Some are from our archive of cookbooks and nutrition challenge journals, while others are compiled from around the web – Ill try and link the best I can so you can follow the blogs with recipes you love!

Paleo Angel Paleo Pumpkin Doughnuts

Ingredients
For Donuts:
1 1/4c almond meal
2 eggs
2T maple syrup
1/2tsp vanilla
3 heaping T pumpkin puree
1/4c melted grassfed butter (or coconut oil)
1/4tsp baking soda
1T cinnamon
1/2tsp nutmeg
1/4 tsp ginger
1/4tsp ground cloves
pinch of salt

For topping
4T maple syrup (rough estimate… you will use this for dipping)
1/4 tsp vanilla
a plate filled with coconut crystals or palm sugar (also used for dipping)
*add more maple syrup and coconut crystals as needed*

Preheat oven to 350. Mix the doughnut ingredients up in a bowl. Use any sized douhgnut pan but be sure to grease the muffin tin well so they pop out easily. Bake for 11 minutes or until toothpick comes out clean. Flip the pan over and doughnuts should pop out easily. Cool on a rack. When cooled, mix together maple syrup and vanilla in a small bowl. On a plate pour coconut crystals/palm sugar. Dip top of doughnuts in maple mix and then immediately dip onto sugar plate. When all are done, SERVE!

Lemon Olive Chicken

Chicken:
3-4 chicken breasts
15 olives, minced
4 cloves garlic, minced
2 lemons
1 tbsp ginger, minced
3 tbsp olive oil

Salad:
2 tbsp olive oil
1/2 shallot, minced
1 tbsp lemon juice
1 tsp dijon mustard
6 oz spinach
Puree olives, garlic, ginger, 1tbsp olive oil and juice of half a lemon. Meanwhile, using a rolling pin or heavy object pound the chicken breast until it is 1/4 inch thin.
Spread olive puree on one side of the chicken breast, roll and secure with two toothpicks.
In a medium sauce pan heat remaining oil. Use sliced lemons to create a bed for the chicken to cook on. Add rolled chicken, cover and cook for about 10 minutes, until chicken is cooked through.
For the salad: In a small bowl or jar mix the olive oil, shallot, lemon juice and diijon mustard. Shake well and toss with spinach.

Mashed Cauliflower

Ingredients:
1 head cauliflower
1 Tbsp butter
3 Tbsp coconut milk
salt and pepper to taste

Steam the cauliflower until fairly soft, if you do not steam it enough you we get a rough instead of smooth consistency. Transfer the cauliflower to a blender, add in butter and coconut milk and puree. Add in salt and peper to taste and serve!

Meatballs

Ingredients:
1 lb beef
1 stalk celery chopped finely
1 carrot chopped finely
1 egg
1 tsp salt
1 tsp pepper
1/2 tsp cayenne
1 tbsp ground flax seeds

Preheat oven to 350 degrees. Mix all the ingredients together in a bowl and form 1 inch balls, let rest for about 5-10 minutes and ten sautee on high searing each side, transfer the pan to the oven to finish cooking.
